Seared kingfish with Asian style salad

Amazing taste sensation, healthy and mouth watering delicious!

Serves 4-6

Shopping List

1 X whole kingfish (gutted, and filleted)
1 carrot, cut into Julienne (fine sticks)
1 Spanish onion, cut into julienne
1 bunch bok choy, finely shredded
1 red capsicum, cut into julienne
1 cucumber, cut into julienne, seeds taken out
1 red chilli, ½ seeds taken out then finely chopped
50ml light soy sauce
3 cloves garlic, finely chopped
1 small stick fresh ginger, finely chopped
½ bunch, finely chopped coriander
50grams grated coconut sugar
Zest & juice of 2 limes
1 tablespoon fish sauce
50ml light soy sauce
30ml sweet soy sauce
40ml sweet chilli sauce
40ml red wine vinegar
1 tablespoon mustard seeds

  • Step 1

    Slice the vegetables into desire lengths and sizes and place all together in a bowl. Set aside.

  • Step 2

    In a saucepan, bring to the boil the Asian sauces, grated coconut sugar, mustard seeds & red wine vinegar. Allow to cool.

  • Step 3

    Heat a non-stick fry pan to high heat, then sear the kingfish for around 1 minute each side, then set aside.

  • Step 4

    Toss a couple of tablespoons of the dressing through the salad and arrange on a plate.

  • Step 5

    Arrange the kingfish on top of the salad and then spoon a little more of the dressing over the fish. Eat immediately.

    Lovely and fresh dish that you can eat all year round
