  • 1 cup carrot tops, washed and dried
  • 1/4 cup fresh basil leaves
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup nuts of your choice (pine nuts, walnuts)
  • 2 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste


  1. In a food processor, combine the carrot tops, basil leaves, Parmesan cheese, pine nuts or walnuts, and minced garlic
  2. Pulse until the ingredients are finely chopped and well combined
  3. While the food processor is running, slowly drizzle in the olive oil until the pesto reaches your desired consistency
  4. Season with salt and pepper to taste, and pulse a few more times to mix
  5. Transfer the carrot top pesto to a jar or container and store it in the refrigerator until ready to use
