Carrot Top Pesto

Method
- In a food processor, combine the carrot tops, basil leaves, Parmesan cheese, pine nuts or walnuts, and minced garlic
- Pulse until the ingredients are finely chopped and well combined
- While the food processor is running, slowly drizzle in the olive oil until the pesto reaches your desired consistency
- Season with salt and pepper to taste, and pulse a few more times to mix
- Transfer the carrot top pesto to a jar or container and store it in the refrigerator until ready to use
