Duck pancakes

In celebration of Lunar New Year this traditional and delicious recipe is loved by all.

Serves 4 - 6

Shopping List

½ cup plain flour
2 tablespoons corn flour
¼ cup milk
2 eggs
2 tablespoons melted butter

  • Step 1

    Whisk all ingredients together either by hand with a whisk or in a food processor until smooth.

  • Step 2

    Cover and let stand for 30 minutes to rest.

  • Step 3

    In a non-stick fry pan, rub the pan with a thin layer or oil from a cloth, then pour in enough batter to give a thin coating to the whole pan over medium heat, once it has come away from the side, approximately 1-1 ½ minutes, flip and cook for 30-40 seconds to finish.

  • Step 4

    If they have browned reduce the temperature, they should not colour at all.

  • Step 5

    Lay out the pancake, brush with hoi sin sauce, add shredded or sliced duck, some spring onions, then roll tightly then serve and enjoy as a light but very tasty lunch.
