Aseeda with tagalia

A traditional Sudanese recipe in celebration of Africa Day.

Serves 4-6

½ kg rye flour
½ litre warm water
1L water
½ cup yeast
1 teaspoon salt
5 onions, finely chopped
¼ cup oil
1 garlic, crushed
500g beef mince
2 cups water
2 tablespoons wayka
½ cup tomato paste
1 teaspoon black pepper

  • Step One

    Add flour, warm water and yeast into a large bowl and combine. Leave in a warm place for 5 hours to rise.

  • Step Two

    Boil water with salt. Add yeast mixture and mix with a wooden spoon.

  • Step Three

    Once thickened, add a small amount of water and simmer until bubbling.

  • Step Four

    Pour into a bowl, and let stand until cool and thick.

  • Step Five

    Using a frypan cook onion in oil until crispy and dry. Blend onion with a little water.

  • Step Six

    Add remaining oil and mince meat and fry.

  • Step Seven

    Add water and leave to simmer for 30 minutes.

  • Step Eight

    Add tomato paste and simmer for 5 minutes.

  • Step Nine

    Add garlic and pepper. Add wayka and stir for 2 minutes.

  • Step Ten

    Turn dough mixture upside down onto a plate then pour the mince mixture over.
