  • 3 tablespoons cajun spice
  • Sea salt and cracked black pepper
  • Olive oil
  • 4 roma tomatoes, sliced
  • 1 red capsicum, roasted, peeled & deseeded
  • 1 finely sliced Spanish onion
  • A handful of baby spinach
  • 120 grams Persian fetta
  • 80 mls balsamic vinegar
  • 100 grams cooked mohgrabieh
  • ½ bunch chopped fresh basil
  • ½ bunch chopped fresh parsley
  • Zest and juice of 2 lemons
  • 50ml red wine vinegar

  • 1 kilo frozen raspberries
  • 300 ml Indian style yoghurt
  • Zest and juice of 2 lemons
  • ½ bunch finely chopped basil or mint

  • 1 whole local snapper
  • 6 oysters
  • 6 large king prawns
  • 10 prawn cutlets
  • 2 whole calamari
  • 10 local black mussels
  • 2 lemons
  • 2 limes
  • 1 iceberg lettuce

  • 60 ml white wine vinegar
  • 200 ml vegetable oil
  • 3 gherkins,  finely diced

  • 1 cup caster sugar
  • ¾ cup water
  • ¼ cup chopped red cabbage
  • ¼ cup shredded cabbage
  • ¼ cup crunchy Asian noodles

  • 1 teaspoon fish sauce
  • ¼ teaspoon sesame oil
  • ¼ cup coriander leaves picked
  • 1 teaspoon soy sauce

  • 1 litre of cranberry juice
  • Blueberries, strawberries, raspberries
  • Honeydew melon, watermelon, mango
  • Diced peaches, apricots, nectarines
