Fresh and home made, a perfect partner for fish & chips.
- 2 whole eggs
- 60 ml white vinegar
- 200 ml vegetable oil
- 1 small Spanish onion, finely diced
- 4 gherkins, finely diced
- 50 grams capers, finely diced
- Zest & juice of one lemon
- ¼ bunch finely chopped flat leaf parsley
- Cracked black pepper
- Blend the whole eggs with the vinegar in a food processor, then slowly add the oil until it has emulsified and thickened.
- Pour the mixture into a bowl, then add the chopped ingredients. Season with black pepper and zest & juice of one lemon.
- Serve on the side of your favourite fish & chips!!
