Shopping list (serves 10):
- 2 tablespoons marmalade
- 60ml maple syrup (Camp if possible, or good quality)
- 100ml pineapple juice
- 1 teaspoon mustard seeds
- 1 teaspoon pickled ginger
- 1 teaspoon crushed fresh garlic
- 1 fresh pineapple, diced
- 2 teaspoons mustard seeds
- 1 Spanish onion finely diced
- 150ml raspberry vinegar
- 1 teaspoon pickled ginger
- ½ teaspoon garlic puree
- 180gms grated palm sugar
1 piece of smoked ham, skin off and scored
Method:
- In a pot slowly bring to the boil all the ingredients, then reduce by a 1/3.
- Take the skin off the ham, then carefully using a very sharp knife make incisions in a criss cross pattern all over. Brush the glaze over the ham and roast on 170C for 1-1 ½ hours, basting every 10-15 minutes.
- Take out, let stand for 10 minutes, then slice to be served for your Christmas feast.
- Bring all of the ingredients to the boil and simmer until it has started to thicken. Set aside to cool & serve with your ham.
