We have chosen our most popular recipes using fresh ingredients from Dandenong Market that the whole family will enjoy.

 

1. Paella

Shopping list:

1kg bomba or calasparra rice
2  diced onion
2  diced carrot
2  diced celery
4  diced tomato
4 cloves crushed garlic
4 tablespoons olive oil
4  diced chorizo sausage
1kg diced boneless chicken thighs
20  diced tiger prawns
20  fresh mussels
1kg diced fish pieces
1kg diced scallops
½ bunch each fresh thyme and parsley
150gms baby spinach leaves
3 litres saffron stock

2. Cajun spiced lamb salad

Shopping list:

2 X lamb back strap
3 tablespoons Cajun spice
Sea salt & cracked black pepper
Olive oil
4 roma tomatoes, sliced
1 Red capsicum, roasted, peeled & deseeded
1 finely sliced Spanish onion
Handful of baby spinach
120grams Persian fetta
80ml balsamic vinegar
100grams cooked mohgrabieh
½ bunch chopped fresh basil
½ bunch chopped fresh parsley
Zest & juice of 2 lemons
50ml red wine vinegar

3. Raspberry yoghurt sorbet

Shopping list:

1kg frozen raspberries
300ml Indian style yoghurt
Zest & juice of 2 lemons
½ bunch finely chopped basil or mint

4. Gourmet seafood platter

Shopping list:

1 whole local snapper
6 oysters
6 large king prawns
10 prawn cutlets
2 whole calamari
10 local black mussels
2 lemons
2 limes
1 iceberg lettuce
2 eggs
60ml white wine vinegar
200ml vegetable oil
3 gherkins,  finely diced
10 capers, finely diced
1 small Spanish onion, finely diced
2 tablespoons tomato sauce
1 tablespoon Worcestershire sauce
1/8th bunch finely chopped parsley

5. Pad Thai noodle salad

Shopping list:

1 cup caster sugar
¾ cup water
¼ cup chopped red cabbage
¼ cup shredded cabbage
¼ cup crunchy Asian noodles
¼ cup bean shoots
1 teaspoon fish sauce
¼ teaspoon sesame oil
¼ cup coriander leaves picked
1 teaspoon soy sauce
1 x lime
salt, pepper to taste

6. Fruit Jelly

Shopping list:

• 1 litre of cranberry juice
• Blueberries, strawberries, raspberries
• Honeydew melon, watermelon, mango
• Diced peaches, apricots, nectarines
• Zest and juice of 1 lemon and 1 lime
• Dash of vanilla extract
• ¼ bunch chopped fresh mint & basil
• 6 leaves of gelatine
• 4 tablespoons honey (optional if need to be sweeter)

7. Stuffed baby calamari

Shopping list:

3 baby calamari (cleaned and gutted)
½ brown onion
1 carrot
1 stick celery
1 red capsicum
2 tbsp chopped thyme
2 tbsp chopped parsley
2 tbsp chopped sage
Handful of chopped baby spinach
2 cloves garlic
4 tbsp powdered parmesan
4 tbsp grated mozzarella or tasty cheese
Breadcrumbs to consistency
1 egg

8. Rack of lamb

 

Shopping List:

1 X 8 point lamb rack
1 chicken breast
1 egg
1 Spanish onion
1 bunch rosemary, finely chopped
2 small carrots
4 cocktail potatoes
6 button mushrooms
1 head garlic
Sea salt
Ground black pepper

9. Easter biscuits

Shopping List:

125grams softened butter
½ cup caster sugar
1 teaspoon vanilla essence
1 ½ cups plain flour
2 tablespoons milk

ICING

1 cup icing mixture
1 teaspoon butter
4-5 teaspoons boiling water
Food colouring of choice

10. Seared Asian kingfish

Shopping List

1 X whole kingfish (gutted, and filleted)
1 carrot, cut into Julienne (fine sticks)
1 Spanish onion, cut into julienne
1 bunch bok choy, finely shredded
1 red capsicum, cut into julienne
1 cucumber, cut into julienne, seeds taken out
1 red chilli, ½ seeds taken out then finely chopped
50ml light soy sauce
3 cloves garlic, finely chopped
1 small stick fresh ginger, finely chopped
½ bunch, finely chopped coriander
50grams grated coconut sugar
Zest & juice of 2 limes
1 tablespoon fish sauce
50ml light soy sauce
30ml sweet soy sauce
40ml sweet chilli sauce
40ml red wine vinegar
1 tablespoon mustard seeds
