Marmalade and maple glazed ham

A beautiful Christmas essential for the perfect feast.

Serves 10


  • 2 tablespoons marmalade
  • 60 ml maple syrup (Camp if possible, or good quality)
  • 100 ml pineapple juice
  • 1 teaspoon mustard seeds
  • 1 teaspoon pickled ginger
  • 1 teaspoon crushed fresh garlic
  • 1 piece of smoked ham, skin off and scored

  • Step 1

    In a pot slowly bring to the boil all the ingredients, then reduce by a 1/3.

  • Step 2

    Take the skin off the ham, then carefully using a very sharp knife make incisions in a criss cross pattern all over. Brush the glaze over the ham and roast on 170C for 1-1 ½ hours, basting every 10-15 minutes.

  • Step 3

    Take out, let stand for 10 minutes, then slice to be served for your Christmas feast.
