Chocolate fondant

Smooth, silky and guaranteed to be loved...

Shopping list (makes approximately 10-12 small puddings):

  • 375 gram butter
  • 375 gram quality chocolate (70% cocoa)
  • 8 whole eggs
  • 7 egg yolks
  • 170 gram sugar
  • 75 gram plain flour
  • dash of vanilla

  • Step 1

    Brush moulds with softened butter and dust with flour, refrigerate, then repeat process but instead of butter spray with canola spray and dust with flour again. Refrigerate.

  • Step 2

    Melt butter and Chocolate together

  • Step 3

    Whip eggs, yolks and sugar together until stiff peaks

  • Step 4

    Mix Chocolate into egg mix.

  • Step 5

    Gently fold in flour

  • Step 6

    Spoon into moulds, then refrigerate.

  • Serving suggestion:

    Depending on size of mould, single serve, around 8-10 minutes on 180C.

  • NB

    It is advisable to make up mix, refrigerate then cook the following day.
