Apple and walnut salad

A perfect summer evening meal, great stand-alone or served with butter fish or chicken.

Serves 4


  • 8 Granny Smith apples, peeled and diced
  • 2 tablespoons lemon juice
  • 1 small red onion, finely diced
  • 4 tablespoons golden raisins
  • 2 medium potatoes
  • 1 celery, chopped
  • 1/3 cup walnuts
  • 100ml low fat mayonnaise
  • 2 tablespoons coriander, chopped
  • Salt and freshly cracked black pepper, to taste

  • Step One

    Peel and chop potatoes, and cook in a saucepan of boiling water. Cool completely.

  • Step Two

    Combine apples and lemon juice in a bowl.

  • Step Three

    Add remaining ingredients, except coriander, and mix together.

  • Step Four

    Sprinkle coriander before serving.

  • Step Five

    Season to taste.
